One grape variety: Chardonnay.

One plot: “Les Devoix” (Merrey sur Arce).

South-west facing, plantation 1983.

Vinification: 50% vinified in oak barrels.

Tasting : A satiny, luminous and clear colour. The first nose asserts the maturity of the grapes with notes of white peach, acacia flowers, verbena, limestone, brioche and toasted wood. When aired: hazelnut, toasted almond, pear, lemon, dried apricot, some pineapple accents. The contact on the palate is supple and fresh. The wine develops a pulpy and coated fruitiness, supported by a delicate and well-integrated lemony acidity. The mid-palate is orchestrated by a predominantly chalky minerality which confers frankness, iodine salinity and length on the palate. The pulpy finish is generous, aromatic and fruity.

Wine and food pairing: Langoustines à la plancha and creamy curry sauce, Quick-fried Scallops, Clementine juice reduction with shallots, Avocado mousseline with sesame oil, Crayfish cassolette with Nantua sauce, Sliced lobster with verbena, Sole meunière, wine sauce, creamy asparagus risotto, Sweetbreads with morels.
