North exposure.

Vinification: Juice exclusively from cuvée.
Malolactic fermentation carried out in stainless steel tanks.
12% cask (MLF blocked).
Aged 30 months in the cellar.
Dosage: Extra Brut.

Tasting: Luminous and rather dense robe. Subtle and pure nose, notes of smoky limestone, aroma of fresh grapes, apple, cherry. Notes of almond, liquorice, pink grapefruit, fresh blackcurrant, wild strawberry, with more heady notes of honeysuckle, pepper and sweet spices.

Contact on the palate is clean and fresh, with creamy, melted effervescence. Pulpy and crunchy fruitiness. Franchise, lamb’s lettuce and lengthens on the palate. Balanced and concentrated, crystalline.

Wine and food pairing: Smoked salmon cannelloni with crab, Warm Oysters Gratin with Champagne, Back of cod snacked with chorizo, Apple mousseline with shallot, turbot fillet, crushed celery and onion juice, Roasted rack of lamb, fried potatoes with woodland mushrooms.

Serving: 10°C in a curved flute.
