Coteaux Champenois Red
“Les Devoix”
One grape variety : Pinot Noir.
One plot : “Les Devoix” (Merrey sur Arce).
South-west exposure (good ripeness), plot selected for its capacity to produce coloured wines: 50 years old, massive selection, limited yields, specific work: pruning, disbudding, green harvesting, manual leaf removal, grassing, ploughing.
Vinification :
Elaboration ” à la Bourguignonne ” : Maceration for around 10 days, sorted and destemmed picking, malolactic fermentation and 10 months ageing in oak barrels. The wine is not fined or filtered.
Wine only made in years of exceptional maturity.
Tasting : Light colour, nose of red fruits: morello cherry, raspberry. Woody notes.
Palate: very fruity, good concentration, length, wood present but melted.
Wine and food pairing: Chicken yakitori skewers, Eggs en meurette, Potée champenoise, Roasted veal loin with herbs.
Serving : 12-15°C.
